That's something I pretty much agree with :) It's generally to do with See-Saw and Yuki Kajuira.

i like hack/sign opening its sort of relaxing and epic at the same time
 
Of course there are so many opening and ending themes but some of my favourite soundtracks include:

- FMA (original series)
- Ergo Proxy
- Cowboy Bebop (one of the best soundtracks to anything)
- Naruto and Shippuden (the second soundtrack in particular)
- Tenchi Muyo
- Ghost In The Shell (first movie OST - especially the theme. sends tingles down my spine)
- Akira
